Paleo Pumpkin Peanut Butter Bars

So tonight we made Grain Free Pumpkin Peanut Butter Bars. They turned out awesome and I couldnt take a photo fast enough so I will post what I have after we devoured a few;) These are not too sweet, full of flavor, and filling because of the yummy protein. A perfect after dinner treat, or morning breakfast snack! You can also add chocolate chips, chopped walnuts or pecans, or top with an icing…all would be yum!

Recipe adapted from:

Grain-Free Pumpkin Bars

Fills one 11×13″ pan


1 cup pumpkin puree

1 cup almond butter/peanut butter

2/3 cup honey/raw sugar/ripe bananas/soaked dates (soaked 30 minutes and pureed)

4 eggs

4 teaspoons pumpkin pie spice*

2 teaspoon vanilla extract

1/2 teaspoon sea salt

1 teaspoon baking soda


Preheat oven to 350F and grease an 11×13″ pan generously with butter.

Combine all of the ingredients in a medium bowl, and mix well until a smooth batter forms.

Pumpkin Pie Spice can be substituted for 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg and 1/4 teaspoon ground cloves
